MAIN STREET BAYOU The trio from Main Street Bayou plays in homage to New Orleans rhythm and blues tradition and style. With piano, guitar, and bass the southern Cajun and delta music keep true tones to the classic southern blues standard. They have kept to the foresight of Allen Toussaint, Professor Longhair, and other energy of original Louisiana R&B.
CHEF PAUL FLYNN Pauls first experiences cooking professionally were at a 24-hour truck stop when he was 15 years old. The menu was primarily breakfast and comfort foods which still influences his tastes until this day. Paul continued working in kitchens throughout college but never really considered it as a career.
Paul spent his 20's building his reputation as a musician and audio engineer but soon discovered that he wasn't entirely satisfied. He took a break to go traveling for 3 months during which time he spent four weeks in New Orleans. He was inspired by the music, food, and people because it was so alien to what he had known living in Minnesota.
After returning home Paul began working in the service industry again and slowly began to love it. Over the course of 8 years he transitioned away from the mentality that kitchen work was just a means to pay the bills. He started even considering, one day, to open his own cafe or restaurant.
Now, having fully embraced the uncertainty of being a restaurateur, Paul is making small but concise steps to make that dream a reality. Hosting and designing this menu for his first ever private dinner is one of them. Paul curated this evening of food, music, and drinks inspired by the spirit of New Orleans, Louisiana.
