Washington State University Extension and the Department of Animal Sciences are excited to announce that a WSU PORK 300 short-course will be offered on Friday and Saturday, June 21-22, 2013 in Pullman. This course will be held immediately before the 2013 Annual WAAE Summer Conference, which begins June 23 in Spokane.

WSU PORK 300 is an intensive two-day, hands-on workshop designed for ag instructors who teach animal science classes; coach Livestock Evaluation and/or Meats Evaluation CDEs, are directly involved in the swine industry, or advise FFA youth who raise show pigs. Participants will learn how environmental, nutritional, genetic, and managerial factors contribute to meat quality. Specifics topics that will be addressed during this short-course will include: 1)Live Animal and Carcass Evaluation Principles; 2)Fabrication, Processing, Product Development and Pork Quality Issues; 3)Value-added Marketing;4)Food Safety and Taste; and 5)Understanding Swine Production from "Farm to Table".

This course will feature nationally recognized speakers in the areas of swine production, feeding, processing, and marketing. Clock hours will be available and academic credit through WSU has been requested. The tentative registration fee is $175; which will include meals, a notebook and numerous additional resource materials. Hotel accommodations will be the responsibility of the participants. The course is limited to 40 participants and will be available on a first-pay, first-serve basis.
