The Barnyard Collective is very pleased to announce a deep-dive, day-long seminar with Bronwen and Francis Percival, authors of the new book Reinventing the Wheel: Milk, Microbes, and the Fight for Real Cheese.

Who are the Percivals, you ask?  

Only some of the strongest advocates of farmstead, raw milk cheese.  This couple looooves to get macro on microbes and are on a spirited mission to defend traditional cheesemaking using the latest advances in modern day science. Bronwen is the cheese buyer for Neals Yard Dairy, served on the editorial board of the Oxford Companion to Cheese and coordinated the English translation of the French textbook, The Microbiology of Raw Milk.  Francis is food editor and columnist for The World of Fine Wine. His work has been shortlisted at the Louis Roederer International Wine Writers Awards for the last four years, winning twice during that time.

Together, Bronwen and Francis have written an amazing new book titled Reinventing the Wheel.

On Thursday September 7th, the Barnyard Collective will host a daylong seminar with the Percivals, composed of four 1.5-hour sessions based on topics from the book:

1)  Cheesefarming: a new old way of thinking about cheese
2)  Managing milk microbes: methods for souring milk
3)  Risk Mgmt: understanding, managing & talking about risk
4)  Clusters, expertise, and American terroir

Join us to rediscover the progressive flavor- and farming-driven origins of American cheese culture: we will explore an era where American farmers rejected modern innovations because they made their cheese and butter taste too bland, and ask what we can learn from their practices. At the end of the day, youll go home not just with a copy of the book, but with annotated reading lists of peer-reviewed papers that will allow you to talk more fluently with your suppliers, your customers, and your regulators.

Purchased ticket includes continental breakfast, lunch, wine and cheese, as well as, a signed copy of Reinventing the Wheel.

We begin promptly at 9:30 AM and will conclude at 4:30 PM.
