For November's rare bourbon dinner, we're showcasing cask strength and cask finished whiskeys in what we're calling "The Pilgrim's Survivor Series." These bourbons are not for the faint of heart. They all have distinct personalities that are intensified during the barrel-aging process.

Guests will join us in the Knights of Revelry Dining Room for dinner by Chef Ben Barth, and there are only ten tickets available.

What exactly do cask strength and cask finished mean?

CASK STRENGTH (also known as barrel proof) is a term used in whisky-making to describe the level of alcohol-by-volume (abv) strength that is used for a whisky during its storage in a cask for maturation typically in the range of 6065% abv

CASK FINISHING (also known as double matured or wood-finished) is the procedure that some whiskeys undergo whereby the spirit is matured in a cask of a particular origin and then spends time in a cask of different origin (generally 6 months to 2 years.) Typically, the first cask is an American oak cask formerly used to mature bourbon. The second cask may be one that has been used to mature some sort of fortified wine, often sherry, though sometimes port, madeira, or even wines such as red burgundy or chardonnay are used.
