Beyond Curry -- Indian Cooking -- Hemalata C. Dandekar, PhD
For some Western cooks, the diversity of flavor and tradition in Indian cuisine can be mysterious and seemingly impenetrable.
This class, taught by the author of Beyond Curry: Quick and Easy Indian Cooking Featuring Cuisine from Maharashtra State sheds light on the culinary delights of India.
The Indian subcontinent with its numerous languages, cultural groups who are differentiated by religion, language and geography, offers a myriad of regional cuisines each with numerous variations determined by caste, class and the crops that are produced locally and readily available.
This varied and abundant culinary landscape of India will be described, contextualized and illustrated by the speaker. There will be a particular emphasis on the foods from the State of Maharashtra to illustrate the key points that are being made: namely food is an important indicator of culture; variations in preparation, presentation and consumption are reflective of this; and, that preparation of food has been a particular arena of womens power and attention.
The goal of the class is to facilitate both an interest in the culture and traditions of the Indian subcontinent and to stimulate an understanding of the cuisines. The class will aim to initiate those not at all conversant with Indian food, and to expand the repertoire of those already well-versed in the cuisine.
Hemalata C. Dandekar, PhD grew up in Maharashtra, India cooking and eating delicious, home cooked food made by family members who were connoisseurs of the details. Dandekar's experimentational approach to traditional dishes is reflected in the recipes in her book Beyond Curry, Quick and Easy Indian Cooking. In her non-culinary life, Dr. Dandekar is Professor and former Department Head, City and Regional Planning, California Polytechnic State University, San Luis Obispo, former member and Chair, Planning Commission, City of San Luis Obispo, and a licensed architect. She is Professor Emeritus, University of Michigan and Arizona State University.
Attendance Policies
Course attendees will present a government-issued ID such as a passport or driver's license and proof of a full vaccination completed at least 14 days prior to the date of a class. Attendees must show a record of a booster dose of vaccine if the second dose of Pfizer or Moderna vaccine (or the single shot from J&J) was taken more than nine months before the day of the class. Attendees who need a reasonable accommodation due to a medical condition or deeply held religious belief must provide proof of a negative Covid-19 PCR test taken within 72 hours of the class date.
For this class all attendees and volunteers are encouraged to wear masks (covering their nose and mouth) in all areas of the venue and throughout the class. Please stay home if you are feeling ill.
