*This is hands-on cooking class culminating in a three course dinner; wine will be served.


Vegetables are the true heart of Italian home cooking. While most associate Italian cooking with iconic dishes such as pasta and pizza, the truth is that vegetables are the major players. In fact, vegetables often take the place of meat in many traditional "cucina povera" dishes.

In this hands-on cooking class taught by acclaimed author Domenica Marchetti, you'll pay tribute to vegetables from the beginning to end of the meal:


Minestrone Verde
a farmers' market-inspired "green" minestrone, with Tuscan kale, peas, zucchini and spinach

Eggplant "Meatballs" in Tomato Sauce
roasted eggplant puree is a clever stand-in for meat in this classic Neapolitan main course

Sweet and Sour Peppers with Oil-Cured Olives
a colorful side with layers of flavor

Carrot Polenta Cake with Marsala
an easy, tender and moist cake made with olive oil
