The Whole Fish: Chinook Salmon
$25 for 18 Reasons members; $35 for general public


Farmed Salmon? Genetically Engineered Salmon? Learn about how incredible Wild Salmon is. We will talk about how Salmon effect our ecosystem and how to use the entire fish in your kitchen.

The "gill to adipose fin" trend means buying fish whole and using the entire animal. Make fish head soup, broil the collars, brine the eggs, bake the skins for "fish bacon" dry the bones and grind them into a "salt" or smoke them for stock. Learn to love sardines,
mackerel and herring for all their wonderful oiliness. Join Maria Finn, author of the Ted Book "The Whole Fish" and Martin Reed, the found of i love blue sea for a talk about Chinook Salmon- from sourcing, gutting cleaning and cooking.

We will demo how to break down an entire salmon, talk about how to cook and eat every part. We will also bring in Bi-Rite Chef Wyatt Sandberg for some culinary inspiration and snacks!



About Maria:
Bios:  Maria Finn is the author of the multi-media TED Book  "The Whole Fish: How Adventurous Eating Will Make You Healthier, Sexier and Help Save the Ocean" (2012). As well, she's author of the memoir "Hold Me Tight and Tango Me Home" (Algonquin 2010) that was optioned for a television series by Fox Studios and "A Little Piece of Earth, How to Grow Your Own Food in Small Spaces (Rizzoli, 2010). Her novel-in-progress "Sea Legs & Fish Nets" was a finalist for the Pen/Bellwether Prize in 2012. She writes for many publications, and is a contributor to Sunset Magazine. She teaches feature writing at Stanford University Continuing Studies and Pixar U.

About Martin:
Martin showed entrepreneurial tendencies at an early age, and even designed, printed and sold greeting cards before starting kindergarten. As a youth, Martin surfed along the California Coast, and this activity makes a person very hungry. So his passions for eating and love of the ocean began to merge. After much brainstorming and proposal writing, he founded i love blue sea shortly after graduation from college. He partnered with the Monterey Bay Aquarium and their prestigious Seafood Watch program to sell only approved sustainable seafood. This way, technology could be used to bring the highest quality seafood to people across the United States and also help to protect our oceans and waterways.
