Flying Pigs Road To Pig Island Beer Prix Fixe Dinner

Another in our popular Monday Night Prix Fixe Dinner Series. Guest Chef Derrick Prince will be curating a menu, including some unique dishes such as (menu subject to change):

Amuse: Apricot country pate crostini with apricot thyme jam, beer pickled shallot and mint
First: Kale, mustard greens, avocado, asian vinaigrette, and crispy pig ear
Second: Squid ink ramen in pork faux (pho) broth with favas, pig tongue, pig shank and uni miso bubbles
Third: Seared pigs heart over sunchoke puree with wilted arugula, sunflower seed sauce, and sunflower sprouts
Fourth: Beer and apple braised pig cheeks over fennel and blue cheese risotto with fennel powder
Fifth: Leaf lard cardamom crust, pomegranate gel, macerated seasonal fruit, berry powder, cream

We'll also be featuring Belgium's Silly Beer. It will be a great night with Belgian beer, pork, and additional VIPs TBA.
