Fermentation Workshop: understanding the cabbage head
Fermentation involves some of the most basic transformative processes that our ancestors used, and that form the basis of human culture. The process of fermenting foods to preserve them and to make them more digestible and more nutritious is as old as humanity. Fermentation does not require specialized equipment and is easy to do. We will focus on basic processes of transformation you can do in your kitchen,creating conditions in which naturally occurring wild organisms thrive and proliferate. This workshop will focus on using various cabbage types with other vegetables, herbs and spices. All materials will be provided and you will take home two one quart variations. Sauerkraut/Kimchi We will be using organic produce for this workshop.
Cost is $25.00 per person only space for the first 20 prepaid by June 23rd
Supplies;
The Nest provides: 2- one quart wide mouth jars for each person 3-4 sets of measuring spoons wooden pusher for each student all the ingredients from the recipes
Students provide: chopping knife cutting board
We are starting with cabbage, the following months of cultivating delicious will include...yogurt, ginger brew, chevre, and sourdough.
